The first time I saw and ate Hard bread or hard tack was around Christmas 1956 or 1957.A bunch of us kids
were mummering and ended up at a store that housed a post office. The owner said that she had a package from my father. He
was working at a US base and would send things home by mail. We were always excited to receive
packages but this one was different. It wasn't chocolate, it was a large bag of hard bread or hard
tack. Apparently he won it at a bingo game.

The most famous recipe with hard bread or hard tack is fish 'n brewis. For most of my life I was used
to salt fish, with my brewis, however; since moving to Central Canada I have used fresh fish. My preference is cod fish but
when cod is not available I use other fish. I've used haddock and Alaskan Pollock but
there's nothing as good as cod.
